Kefir cheese is an easy cheese to make at home. Its super versatile and can be used to replace sour cream, cream cheese and ricotta cheese. The longer you let it strain, the harder the cheese will be. If you stop straining after about 8-10 hours you will have a sour cream texture, let it go to 18-24 hours and you will have a cream cheese/feta cheese texture. Let us know if you try this.
