Aloo Shimla Mirch
Ingredients:
Oil 1/4 cup
Onion sliced 1 cup
Ginger garlic paste 1 tbsp
Tomato sliced 1 cup
Red chili powder 1 tbsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Red chili flakes 1 tsp
Hot sauce 1 tbsp
Turmeric powder 1 tsp
Salt 1 tsp
Potato cubes 3 cups
Yogurt 1 cup
Water 1 cup + 1/2 cup
Capsicum cubes 2 cups
Green chilies 1 cup
Green coriander (for garnishing)
Directions:
1. In a pot heat oil and add onion. Cook until translucent. Now add ginger garlic paste and cook for a minute.
2. Add tomatoes, red chili powder, cumin powder, coriander powder, red chili flakes, hot sauce, turmeric powder, salt and cook for 2-3 mins.
3. Add potatoes and cook for 3-4 mins. Now add 1 cup of water and cover and cook until potatoes are fully done.
4. Take off the lid, add capsicum and cook for 3-4 mins. Now add 1/2 cup of water and cover and cook until capsicum is fully done.
5. Add green chilies and mix it well. Dish it out and add green coriander. Your Aloo Shimla Mirch is ready.

Cooking time: 30-35 mins
