This Caribbean Sweet & Sour Yellowtail Snapper is crispy, juicy, and full of bold island flavor. I used 4 whole yellowtail snappers cut in half, seasoned the way we actually season fish (no plain salt), then finished it in a glossy pineapple sweet & sour sauce with sweet peppers and onions.

Caribbean Sweet & Sour Yellowtail Snapper
Fish (serves 4):
• 4 yellowtail snappers, cleaned & cut in half (8 pieces total)
• 2 tsp fish seasoning (instead of salt)
• 1½ tsp garlic powder
• 1 tsp black pepper
• 1½ tsp paprika
• 1 tsp sazon
• Juice of 1 lime or lemon
• ½ cup flour or cornstarch (for light coating)
• Oil for frying
Sweet & Sour Sauce:
• 1½ cups pineapple chunks
• ¾ cup pineapple juice
• 1½ cups sweet peppers (sliced)
• 1 medium onion (sliced)
• 3 cloves garlic (minced)
• 2 tbsp brown sugar
• 2½ tbsp white or apple cider vinegar
• 2 tbsp ketchup
• 1½ tbsp soy sauce
• 1 tsp fresh thyme
2 tbsp butter or oil
Optional: whole Scotch bonnet for heat (don’t cut)

How It’s Made
1. Clean fish with lime, pat dry, and season generously with fish seasoning, garlic powder, black pepper, paprika, and sazon.
2. Lightly coat fish with flour or cornstarch and fry until golden and crispy. Set aside.
3. In a pan, sauté onion, garlic, sweet peppers, and pineapple in butter or oil.
4. Add pineapple juice, brown sugar, vinegar, ketchup, soy/Maggi, thyme, and Scotch bonnet.
5. Simmer until the sauce becomes glossy and slightly thick.
6. Gently return fish to the pan and spoon sauce over the fish. Let it soak for 1–2 minutes.
7. Serve hot over rice with fried plantains or your favorite sides.
This dish is perfect for weeknights, family dinners, or when you just want something comforting with real flavor.
