Irish stew, or stobhach Gaelach, is Ireland’s most iconic comfort dish; simple yet steeped in history and tradition. Originating in the early 19th century, it was born of necessity, crafted by rural families who simmered what they had: mutton, onions, potatoes, and carrots, all slow-cooked into a hearty, sustaining broth. There are many regional differences; some adding barley, parsnips, or even stout.

Folklore paints it as a traveler’s meal, shared by hearth fires where stories of the wee folk and wandering souls were told.
