🥘 Ingredients – Hyderabadi Egg Dum Biryani
🥚 For Eggs
• Eggs – 6–8 (boiled)
• Oil – 2 tbsp
• Turmeric powder – ¼ tsp
• Red chilli powder – ½ tsp
• Salt – to taste
🍳 For Egg Masala / Marination
• Thick curd (yogurt) – 1 cup
• Ginger garlic paste – 2 tbsp
• Fried onions (birista) – 1 cup
• Green chillies (slit) – 3–4
• Fresh mint leaves (chopped) – ½ cup
• Fresh coriander leaves (chopped) – ½ cup
• Red chilli powder – 1½ tsp
• Turmeric powder – ½ tsp
• Coriander powder – 1 tsp
• Garam masala powder – 1 tsp
• Biryani masala – 1 tbsp
• Lemon juice – 1½ tbsp
• Oil – 3 tbsp
• Salt – to taste
🍚 For Rice
• Basmati rice – 3 cups
• Water – as required
• Bay leaves – 2
• Green cardamom – 4–5
• Cloves – 6–8
• Cinnamon stick – 2 inch
• Shah jeera (caraway seeds) – 1 tsp
• Salt – to taste
🌸 For Layering & Dum
• Saffron strands – 10–12
• Warm milk – ¼ cup
• Ghee – 3–4 tbsp
• Fried onions – ½ cup
• Mint leaves – few
• Coriander leaves – few
• Rose water / Kewra water – 1 tsp (optional)
