HANDVA
CHEF AANAL KOTAK
PREP TIME: 15-20 mins
COOKING TIME: 30-40 mins
INGREDIENTS:
FOR HANDVA FLOUR:
• 1 cup small grain rice
• ½ cup chana dal
• ¼ cup toor dal
• ¼ cup urad dal
FOR HANDVA:
• 2 cup handva flour
• Salt as per taste
• 2 cup buttermilk
• 1 tbsp ginger green chilli paste
• Salt as per taste
• 1 tsp turmeric powder
• 1 tbsp coriander powder
• 1 tsp cumin powder
• 1 tbsp red chilli powder
• ½ cup bottle gourd/ lauki/ dudhi (grated)
• ½ cup carrot (grated)
• 1/2 cup corn kernels
• 1 tsp sugar
• Pinch hing
• 2 tbsp coriander leaves (chopped)
• 1/2 lemon (squeeze)
• ¼ tsp baking soda
• 1 tbsp hot oil
FOR TEMPERING:
• 2 tbsp oil
• ¼ tsp mustard seeds
• ¼ tsp cumin seeds
• 1 tsp sesame seeds
• 5-6 nos. curry leaves
• Pinch hing
METHOD:
FOR HANDVA FLOUR:
• In a mixture jar, add dal and rice. Grind it into a coarse powder.
• Handva flour is ready. Store it in airtight container for upto 6 months or more in refrigerator.
FOR HANDVA:
• In a mixing bowl, add handva flour, salt. Add buttermilk gradually and make a thick batter.
• Cover and rest batter for 6 hrs or overnight in a warm place.
• The batter becomes fluffy and properly fermented.
• Now in the batter add ginger green chilli paste.
• Then in a batter, Salt as per taste, turmeric powder, coriander powder, cumin powder, red chilli powder, bottle gourd, carrot, corn kernels, sugar, hing, coriander leaves, lemon.
• mix this well. Add baking soda and hot oil in it. Mix well.
• In a kadai, add oil, mustard seeds, cumin seeds, sesame seeds, curry leaves, and a pinch of hing. Sauté it.
• Pour handva batter in the centre of kadai. Cover and cook handvo for 12-15 minutes on low-medium flame.
• Flip another side and again cook handvo for 5-7 minutes till it becomes crispy from both sides.
• Cut into the desired shape. Serve with crispy handvo with green chutney.
