Fave e cicoria (Fava bean puree with chicory)
This dish is a classic, rustic , la cucina povera dish from Puglia. I grew up eating this dish and I loved it. Healthy, hearty and for us very traditional. It's such an easy, simple dish, great for vegetarians or those who just don't want protein for dinner! Try it, you will love it!

Ingredients
500g (1 lb) -dried and peeled fava beans
1 bay leaf
Half onion
Half large potato (or 1 small potato)
Olive oil
Water
Salt
For cicoria:
1 large head of chicory (about 100g per person )
Salt pepper
Water
Olive oil for drizzling and pickled red onions
**soak dried fava beans in water overnight or 8 hours until soft
**to a pot add olive oil, fava beans, bay leaf, onion, potato and salt, cover beans with water (about 1 inch above beans) and cook on low until water has evaporated and beans are tender. Check beans as they may be hard still and more water needs to be added. They must be soft with little to no water remaining in pot.
**once they are cooked, using the blender or hand held blender puree until smooth.
**bring water to a boil, add salt then drop in the cicoria and cook until soft. Strain and once slightly cooked squeeze out excess water completely as they hold a lot of water.
**plate beans , then add the chicory to the side or ontop, drizzle with extra virgin olive oil, and add some sliced red onions (soak in vinegar and water for 1 hour). Serve with toasted Italian bread and enjoy
