Day 29 And it’s shortbread.

Another really easy recipe and 10 times better than shop bought.

250 g plain flour
250 g butter
125 g caster sugar
125 g rice/cornflour and fine semolina mixed

The semolina in this recipe gives it a lovely crunch.
You can add chocolate chips, Rosemary, lavender, Earl grey tea leaves - Anything you fancy. Shape them any way you wish or use as the base of the famous Millionaires shortbread.

A wonderfully crumbly and buttery 🧈 biscuit that makes a perfect sweet treat with a cup of tea ☕️

Of course you don’t need a 💚Thermomix💚 to make this recipe but it does make it easier and very hands off. Shortbread is like pastry in that it doesn’t like a lot of handling. 🍪

And of course there’s only one bowl to wash up! The machine has the scales ⚖️ inbuilt so that’s another piece of kitchen equipment you can rid yourself of to make more room in your cupboards!
