This recipe is for anyone like myself who finds it difficult to try to eat healthy. One thing about this Middle Eastern Balela salad is that it's bursting with bright/fresh flavors of fresh mint and lemon so anything you eat it with just brightens up the whole plate. Another reason why this is number one on my list is because when I make a big batch and leave it in the fridge, it's there all week marinating in all of its flavors. This makes the most flavorful and perfect go-to snack or side dish full of vitamins, minerals and loaded with fiber!

Ingredients:
2 15 oz cans Garbanzos
1 15 oz can black beans
1/2 cup Chopped fresh Mint
1/2 cup Chopped fresh Parsley
3 Tbs. Apple Cider Vinegar
3 Tbs. Olive Oil
3 Tomatoes
1/2 Onion
2 Cloves Crushed Garlic
1 Lemon
Chop up the mint, parsley, onion and tomatoes into small pieces. Add it to a big mixing bowl with the rinsed and drained beans, oil, vinegar and lemon juice. Season with salad and pepper to taste and enjoy! This balela gets better and better as it sits in the fridge for up-to a week, so be sure to make plenty!!
