The washed coffee processing method is widely used by coffee farms around the world. In my country, Colombia, most farmers use this traditional method to process their coffees. The result if done properly is a super clean cup of coffee full of flavor and with crisp clean acidity and aftertaste. Many washed coffees reach scores over 80 points whcih makes them specialty coffees. The flavor profile and flavor notes will vary depending on aspects like the varietal, elevation and fermentation time the farmers decide to use.
