Ingredients quantity
Whole dry coconut ½ no
Whole onion peeled 2 no
Water as required
Ginger peeled 2 inch
Garlic cloves 8 no
Oil 1 tbsp
Whole coriander seeds 1 ½ tbsp
Cumin seeds 1 tsp
Black cardamom 5 no
Green cardamom 10 no
Mace 1 no
Cinnamon stick 1 no
Cloves 5-6 no
Whole black pepper 1 tsp
Star anise 1 no
White sesame seeds 1 tbsp
Black Stone Flower 1 tbsp
Dry red chilli 6 no
Water as required
Oil 1 tbsp
Bay leaves 3 no
Mutton on bone 750 gram
Salt to taste
Red chilli powder 1 tbsp
Turmeric powder ½ tsp
Garam masala ½ tsp
Green chili 3 no
Water as required
Fresh coriander sprig 5-6 no
Fresh coriander sprig for garnish
Method :-
1. Take dry coconut and roast on direct flame until dark or black colour.
2. Take peeled onions and cut into one by two, roast on direct flame until dark or black colour. Turn & char from all the sides.
3. Remove the extra skin of roasted coconut and wash well.
4. Set a large vessel on high flame and take garlic and ginger cut it into sliced.
5. Add oil in a vessel and heat and add sliced garlic and ginger roast for a minute.
6. Add whole coriander, cumin seeds, black cardamom, green cardamom, mace, cinnamon stick, cloves, black pepper, star anise, white sesame seeds, black stone flower and dry red chilli dry roast until fragrant.
7. In a mixer jar add roasted spices, roasted coconut, roasted onion and water grind a smooth paste.
8. In that vessel heat oil and add bay leaves, mutton and salt mix well.
9. Add red chilli powder, turmeric powder and garam masala mix well & cook for a minute.
10. Now add grinded paste and mix well. Cook well in medium heat and add green chilli mix well.
11. Add water in it and mix well.
12. Take fresh coriander sprig and chopped well then add in a mutton mix well.
13. Turn off the flame and side out in a serving bowl and garnish with fresh coriander sprig
