Nature’s Plate, a vegan food truck specializing in allergen-friendly cuisines, will celebrate its one-year anniversary on Dec. 30, 2025. The food truck aims to provide healthy dishes to underserved communities by sourcing local produce.
Highlighting the menu, Sieg said the restaurant prepares its ingredients by marinating tempeh in the same flavors used for traditional corned beef sandwiches. “We marinate it exactly like you would corn beef, so there’s pickle juice and mustard powder,” she said while showcasing her Reuben sandwich, which uses the marinated tempeh as a substitute for meat.
