The process begins by cutting the plant’s outer stems and carefully digging the taro roots from the ground. After cleaning off the soil, the tubers are prepared for roasting, while the tender stems can be tasted fresh.
The taro roots are buried among hot ash and embers, then covered and left to cook slowly until soft inside. Meanwhile, chili peppers, Sichuan pepper, sesame, and salt are crushed together in a stone mortar to create a flavorful seasoning.
Once cooked, the taro is peeled to reveal its soft white center, dipped into the spicy mixture, and eaten—showcasing a simple yet delicious traditional cooking technique.
