🍆 𝐏𝐚𝐬𝐭𝐚 𝐚𝐥𝐥𝐚 𝐍𝐨𝐫𝐦𝐚 🇮🇹
A timeless Sicilian dish born in Catania.
Rich, velvety, and full of soul.
✨ We used rigatoni, golden fried eggplant, and baked ricotta salata (infornata) to keep it authentic.
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
• 400g rigatoni pasta
• 2 large eggplants (thin, wide slices)
• 600ml tomato passata
• 2 garlic cloves
• Fresh basil leaves
• 60g ricotta salata infornata
• Extra virgin olive oil
• Salt
𝐇𝐎𝐖 𝐓𝐎 𝐌𝐀𝐊𝐄 𝐈𝐓:
① Slice the eggplants and fry until golden and tender. Drain on paper towels.
② Sauté garlic in olive oil, add passata and basil. Simmer for 15 minutes.
③ Cook rigatoni al dente in salted water.
④ Drain and toss pasta with sauce and half the eggplants.
⑤ Plate, top with remaining eggplants and grated ricotta salata infornata.
⑥ Garnish with basil and a drizzle of olive oil. Serve hot.
