Pumpkin Pudding
Serves: 4–5
Ingredients
1½ cups low fat milk (or milk alternative, if using a sweetened non-dairy milk, cut the sugar in half)
½ cup pumpkin purée
¼ cup sugar (or maple syrup or honey)
2 tablespoons cornstarch
1/2 teaspoon pumpkin pie spice (or cinnamon)
Pinch of salt
Instructions:
1. In a medium saucepan, whisk together the milk, pumpkin, sugar, cornstarch, spices, and salt until fully smooth.
2. Place over medium heat and cook, whisking constantly, until the mixture thickens and begins to gently bubble (about 5–7 minutes).
4. Remove from heat.
5. Pour into individual bowls or a serving dish.
6. Chill for at least 30 minutes, or serve warm if desired.
Serve with a dollop of whipped cream and sprinkle with toasted nuts if desired
Stays fresh in the refrigerator for 4 days.
