Namak para! A popular deai snack that's crunchy, savory, and utterly addictive. Here's a simple recipe to make namak para at home:
Ingredients:
2 cups all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup ghee or oil
1/2 cup lukewarm water
Chopped fresh cilantro or kasoori methi for garnish (optional)
Instructions:
1. In a large mixing bowl, combine the flour, salt, baking powder, and baking soda.
2. Add the ghee or oil and mix until the dough comes together.
3. Gradually add the lukewarm water and knead the dough for 5-7 minutes, until it becomes smooth and pliable.
4. Cover the dough with a damp cloth and let it rest for 30 minutes.
5. Divide the dough into 2-3 equal portions, depending on how thick you want your namak para to be.
6. Roll out each portion into a thin sheet, about 1/8 inch thick.
7. Cut the sheet into diamond or square shapes, about 1-2 inches in size.
8. Heat oil in a deep frying pan over medium heat.
9. Fry the namak para in batches until they're golden brown and crispy.
10. Remove the namak para from the oil and drain on paper towels.
11. Garnish with chopped cilantro or kasoori methi, if desired.
12. Serve the namak para warm or at room temperature.
Tips:
To make namak para extra crispy, you can add a little cornstarch or semolina to the dough.
If you don't have ghee, you can use oil or a combination of oil and butter.
To make namak para in advance, you can fry them and store them in an airtight container for up to 2 days. Simply reheat them in the oven or microwave before serving.
