In this video, I’ll show you how to make Saikyozuke salmon (西京漬け鮭) This is a classic Japanese dish made by marinating salmon in a sweet and savory Kyoto-style white miso (Saikyo miso). This traditional method brings out deep umami flavors and creates a perfectly tender, flaky fish with a slightly caramelized finish.
Perfect for a Japanese-style meal at home, bento boxes, or as a make-ahead dish. This recipe is simple, authentic, and absolutely delicious.
*Saikyo Miso might not be available where you are, so you can substitute it with another white miso. Saikyo Miso tends to be a little on the sweeter side.
The recipe for this marinade is for 4 fillets of salmon.
1 Tbsp. Mirin
1 Tbsp. Cooking Sake (Ryourishu)
1 Tsp. Sugar (optional)
3 Tbsp. Saikyo Miso (or other white miso)
