Cannoli Bites Platter

Silky smooth, sweet, and creamy. That’s right, cannoli cream is all that and more, so we do love a cannoli. But there are many ways to enjoy the creamy cannoli filling (besides eating by the spoonful), and Cannoli Cream Bites are one example. It is surprisingly easy to whip up a batch of cannoli cream and fill these phyllo shells. I garnished the platter with fruit and nuts, but you do your own creative thing with your favorite garnishes. I can promise you it will taste heavenly no matter what you decide to do.
Ingredients
• 15-16 ounces full fat ricotta, drained
• ½ cup powdered sugar
• ½ tsp vanilla extract
• ½ tsp cinnamon
• ½ cup chocolate chips
• 1 package phyllo shells defrosted if frozen
• Assorted fruit: I used raspberries and strawberries
• ½ cup finely chopped walnuts for garnish
• ¼ cup chocolate chips for garnish
• Chocolate sauce for garnish
• Powdered sugar for garnish
Instructions
1. Drain ricotta cheese by placing it in a strainer or cheesecloth and then over a bowl. Ideally do this overnight, but drain for at least 2 hours so the cannoli cream will not watery.
2. Add drained ricotta cheese, powdered sugar, vanilla, and cinnamon to a bowl.
3. Mix on a high speed with a hand mixer for approx 2 minutes or until you achieve a silky and creamy consistency.
4. Add chocolate chips and stir to combine.
5. Refrigerate the mixture for a few hours or overnight.
6. To assemble the cannoli bites platter:
a. Arrange phyllo shells on a large platter and fill each with cannoli cream.
b. Slice a few of the strawberries and place a small slice on top of each shell.
c. Arrange the rest of the strawberries and raspberries around the platter.
d. Sprinkle platter with the chopped nuts and ¼ cup chocolate chips.
e. Use the chocolate sauce for additional garnish.
f. Sprinkle entire platter lightly with powdered sugar.
NOTE: this glorious platter of cannoli bites and fruit is best eaten the same day, but be sure to refrigerate leftovers if there are any!
