I know, this isn't a traditional pineapple tart. But dare I say, it's better? A crisp shortcrust pastry base, filled with sticky, sweet and tangy pineapple jam, and topped with an aromatic, chewy and nutty pandan-scented frangipane.
Yes, these tarts are a little fussy to make, but since all those long conversations with relatives and all that visiting isn't happening this year, don't we all have the time?
