Making fruit leather or cakes from different berries are a good way to preserve them. When using hawthorn it´s important to get the right consistency, not to runny and not to thick. Depending on when you harvest the berries you need to add more or less water to it.
In the video I just use my hand to squeeze the it and throw away the remains, but you can use a strainer to get a cleaner paste. The paste sets quite quickly, but I usually wait for half an hour. Slice it up and air dry it or dry it in an oven. When dry it will last for years.
