Ingredients:
Broth:
5-6 lbs of Bones- Beef, Chicken, Oxtail, bone marrow, knuckle, etc
2-3 onions
2-3 full ginger roots

6 cinnamon sticks
6-8 star anise
10 cloves
5 cardomom pods
1/3 cup coriander seeds
1 tablespoon peppercorn (Optional)
Seasoning
1/4 cup of fish oil
1/3 cup of brown sugar
7 tablespoons salt + more to taste
6-8 tablespoons pho flavor
Soup Toppings:
• Rice noodles
• Thinly Sliced beef
• Cilantro
• Green/White onion
• Lime
• Hoisin
• Siracha
• Bean sprouts
• Jalapeño
Recipe:
1) Preheat oven to 425 degrees F.
2) Fill a large stock pot up to 75-80% with water. Mine is 14 liters and I fill it up to about 11 liters. Place on high heat and bring to a boil.
3) Line a baking pan with parchment paper and spread your combination of beef/chicken bones, oxtail, knuckle bones or marrow bones and spray with cooking oil. Place in the oven and bake for 45 minutes. After the are done roasting, transfer into the stockpot.
4) Quarter onions and half ginger. Broil for about 10 minutes until charred. Transfer into the stockpot.
5) Toast cinnamon, star anise, cardamom, clove and coriander on medium high hear, stirring often until fragrant. Transfer to a tea infuser and place into the stock pot.
6) Oil a hot pan and sear chuck steak on both sides- about 5-6 minutes each. Transfer to stock pot.
7) Salt the water/broth, cover with a lid and let it simmer for about 24 hours. Can do less time.
The Next Day:
8) Optional: Slice steak. You can also buy pre-slices meat.
9) Wash, prepare and chop toppings. Options: Green Onion, Cilantro, White Onion, Lime, Jalepeno, Bean Sprouts.
10) Strain broth.
11) Season broth with brown sugar, fish sauce, pho seasoning and any additional salt, depending on flavor. Simmer for another 10 minutes to allow seasonings to fully disolve. Taste the broth and adjust accordingly.
12) Cook noodles with salted boiling water according to the instructions. Usually about 30 seconds to a minute.
13) Arrange bowl with noodles, toppings and raw beef on the top. Pour the hot broth over the beef, which will cook them as it sits.
14) Top with Hoisin and Siracha if desired and enjoy!
