It's time for another Cooking with Nonnie video. This time, Jess and Nonnie made banana pudding, a family favorite. This recipe is a variation of Nonnie's mother's recipe. There are several things about the video to notice.
Jess sliced up the bananas! This is her first time to cut with a knife. We were VERY impressed with how well she did this!! She has never used a knife because of her fear of cutting herself. This is the first time we’ve ever convinced her to try cutting something. Nonnie had Jess use a plastic knife so that she would feel safe, and what a great job she did!
Next, we were thrilled with how well Jessica handled touching the banana pieces. Jessica is tactile defensive which means she has negative and out of proportion reactions to certain types of tactile stimuli, such as the texture of raw food, like a banana after it is peeled. That’s why you will see Jess heading to the sink to wash her hands throughout the video. In the beginning, she struggles to even hold the peeled banana steady so that she can slice it. But by the end of the video, she is picking up slimy banana slices and throwing them into the pan.
Another thing worth mentioning is how engaged Jess was with this activity. Hearing her ask Nonnie questions like how many eggs are used in the recipe was a surprise to me. It is always a bonus when we can get Jess interested in activities outside of her norm.

Banana Pudding
2 eggs
1 cup sugar
1 tbsp cornstarch
2 cups milk
2 or 3 sliced bananas
1 box vanilla wafers
1 tsp vanilla
In a microwave safe deep bowl, beat the eggs. Add sugar and cornstarch. Mix thoroughly. Add milk. Cook on high in 3 minute increments, stirring in-between to check consistency. When thickened, add vanilla and stir. Place alternate layers of vanilla wafers, sliced bananas, and pudding, finishing with a layer of vanilla wafers on top.
