Chrisitan gives us a lesson in harvesting and processing cacao. First he shows us the three different varieties growing on the farm. He then uses his fist to break open the pod and shows us the beautiful fruit inside. He compares it to alien corn in appearance. He then gives us a lesson in how to best harvest from the tree making sure to explain how he likes to cut the fruit cleanly in order to help the tree heal up afterwards. He also emphasizes pruning up the tree to promote a nice canopy and cutting up the branches and using them as mulch to feed the tree. They harvest all the cacao and then take them up to the house for processing. He stops to show us some coffee and cacao which is drying in the sun. Next Christian again uses his fist to bust open the pods and removes the seeds and pulp and puts them in a jar. When it is full he covers the jar with a mesh lid and then upends it into a larger container and leaves it in the sun to ferment. This trunks the pulp to liquid which drip out into the lower jar. He explains that this juice is delicious as is or can be used to make alcohol or vinegar.
