Cozy Cooking: Chili & Cheddar Jalapeno Cornbread

Ingredients
1000g of ground beef
1 bulb of garlic
2 tomatoes
1 large white onion
2 red peppers
2 jalapeno peppers
1 cup of diced mushrooms
1 tbsp of smoked paprika
2 tbsp of chili powder
salt and pepper to taste
1/4 of sriracha or franks red hot sauce
1 can of corn
1 can of red kidney beans
2 cans of diced chili tomatoes
Cook beef then dice garlic, tomatoes, peppers, onion and mushrooms. COok over medium heat until vegetables soften, then add in spices, hot sauce, corn, beans and chili tomatoes. Bring to a boil over medium heat then reduce heat and simmer for 20 mins. In the mean time you can cook your cornbread.

1 cup yellow cornmeal
⅔ cup white sugar
3 ½ teaspoons baking powder
1 teaspoon salt
1 cup milk
⅓ cup vegetable oil
1 large egg
1 cup of shredded cheese * Optional
2 Jalapeno peppers * Optional
