The squid:
We always use white squid in this dish. It's meat more tender than the other varieties.
The coating:
Equal amount of cornstarch and flour and a bit of baking powder and we always season our coating.
The oil:
Used cooking oil is used here. We reuse oil. Seafood used oil for seafood, chicken for chicken, etc. - it helps deepen the coating color. Oil temp -be at least in the range of frying chicken temperature.
The dip:
A simple catsup, mayonnaise, and sugar combination.
