Summer Cherry and Acorn Squash Salad for One
Ingredients:
• 1 small acorn squash
• 1 tablespoon of olive oil
• 1 pinch of salt
• 1/2 cup of cherries, pitted
• 1 tablespoon of truffle balsamic vinegar
• 1 tablespoon of port wine balsamic vinegar
• 1 tablespoon of raspberry vinaigrette
• 1 tablespoon of green herb oil
• 1 pinch of dill
• 3-4 quail eggs, depending on personal preference
• 1 small heirloom tomato
• 1/2 avocado
Instructions:
1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
2. Slice the acorn squash into apple slice shapes. Toss with olive oil and salt, then arrange on a baking sheet.
3. Roast the squash in the preheated oven for about 25 minutes, or until tender and lightly browned.
4. While the squash is roasting, prepare the salad dressing. In a small bowl, combine the pitted cherries, truffle balsamic vinegar, port wine balsamic vinegar, olive oil, raspberry vinaigrette, green herb oil, salt, and dill. Stir until well mixed.
5. Boil the quail eggs to your preferred level of doneness. Once done, peel and set aside.
6. Slice the heirloom tomato and avocado.
7. To serve, arrange the roasted squash, sliced tomato, and avocado on a plate. Drizzle with the cherry dressing, then top with the boiled quail eggs.
