i n g r e d i e n t s :
• 700 g cottage cheese ( I like using 10-15% fat)
• 3 large eggs
• 1/2 cup (110 g) granulated sugar (can be replaced with non sugar sweetener to make it low carb)
• 200 g plain full-fat yogurt (can be replaced with sour cream)
• 50 g unsalted butter, melted + 1 tbsp to butter a baking dish
• 1 tsp vanilla extract
• 1/2 cup (85 g) semolina flour + 1 tbsp for the baking dish (can be replaced with almond flour to make it low carb)
• A pinch of sea salt
• 2 cups fresh raspberry (can use any other berry, but raspberry goes best with cottage cheese)
I used 8" x 10"/20 x 27cm baking dish.
Bake the casserole at 400ºF/200ºC for 40-45 min. Let it slightly cool before serving. Serve with sour cream and fresh berries.
The baking time and temperature are only a guide. As every oven is different, you may need to make adjustments to get the right result.
m e a s u r i n g :
1 cup = 240 ml
1 tbsp = 15 ml
1 tsp = 5 ml
