This easy oven-roasted ratatouille is one of my favorite ways to turn simple vegetables into a deeply flavorful, comforting dish. No fancy slicing, no stovetop babysitting—just rough-chopped vegetables, good olive oil, and the oven doing the work.
Everything is cut into hearty 1-inch chunks, roasted until tender and caramelized, then finished under the broiler for extra depth and richness. The result is a rustic, French-inspired vegetable dish that works beautifully as a main or a side.
Ingredients:
1 eggplant, cut into 1-inch chunks
1 zucchini, cut into 1-inch chunks
1 summer squash, cut into 1-inch chunks
1 bell pepper (any color), chopped
1 red onion, chopped
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar or balsamic glaze
2 (14-ounce) cans diced fire-roasted tomatoes
Instructions:
Preheat oven to 420°F.
Add all vegetables to a large roasting pan or sheet pan.
Drizzle with olive oil and balsamic vinegar (or glaze).
Pour in the fire-roasted tomatoes and gently toss to combine.
Roast for 40 minutes, stirring once halfway through.
Broil for 10 minutes until lightly caramelized and bubbling.
How to Serve:
As a vegetable stew with crusty French bread
Spoon it over rice or grains
Serve as a side dish with chicken, steak, or fish
