Ingredients:
Flour: 800 grams
Butter: 200 grams (room temperature)
Eggs: 4 pieces
Sour Cream: 200 grams
Meat (chicken): 600 grams (finely chopped)
Onions: 2 pieces (finely chopped)
Salt and spices: To taste
Preparation Steps:
Step 1: Preparing the Dough
Combine Butter and Flour: Add room-temperature butter to the flour and mix until the texture resembles fine crumbs.
Add Sour Cream: Incorporate the sour cream and mix thoroughly.
Add Eggs and Seasoning: add the eggs to the mixture along with a pinch of salt, and knead until a smooth dough forms.
Divide and Rest: Divide the dough into 16 equal portions. Wrap and refrigerate for 30 minutes.
Step 2: Preparing the Filling
Chop Meat and Onions: Finely chop the meat and onions.
Season: Add your preferred spices and a pinch of salt, then mix well to combine.
Step 3: Assembling the Kibinai
Roll the Dough: Take each dough portion and roll it into a flat, round shape.
Add Filling: Place a generous spoonful of the meat mixture in the center.
Seal and Shape: Fold the dough over the filling to create a semi-circle. Pinch the edges together and braid them decoratively.
Step 4: Baking
Prepare for Baking: Place the kibinai on a baking sheet lined with parchment paper.
Brush with Yolk: Beat an egg yolk and brush it over each kibinai for a golden finish.
Bake: Preheat the oven to 180°C (356°F) and bake the kibinai for 30 minutes or until golden brown.
