Matcha Yogurt Cake (20cm Pan)
Ingredients
Cake Batter
5 egg whites
160g sugar
6 egg yolks
4g vanilla extract
140g cake flour
20g cornstarch
10g matcha powder
60g milk
40g butter
1 lemon
500g strawberries
Syrup
45g sugar
70g water (boil and cool)
Filling
180g plain yogurt
90g sugar
3g lemon juice
3g vanilla extract
50g mascarpone cheese
360g whipping cream
6g gelatin
Instructions
Place a bowl with milk and butter over hot water and heat until about 50°C (122°F).
Sift all dry ingredients together.
Whip egg whites on medium speed.
Add 1/3 of the sugar and whip 1 minute
Add another 1/3 and whip 1 minute
Add remaining sugar and whip on low speed for 1 minute to stabilize
Add egg yolks and gently mix.
Add half of the dry ingredients and fold gently, then add the rest.
Mix a small portion of batter into the warm milk–butter mixture, then pour it back into the main batter and fold gently.
Pour batter from a height to remove air bubbles.
Bake at 150°C (302°F) for 30 minutes.
Remove from oven, tap once to release steam, unmold, and cool completely. Remove baking paper.
Wash and slice strawberries. Cut cake layers (two 18cm layers and one 16cm layer).
Filling Preparation
Mix mascarpone, yogurt, sugar, lemon juice, and vanilla with a whisk.
Whip cream and add dissolved gelatin.
Combine with the yogurt mixture.
Assembly
Layer:
18cm cake → syrup → cream → strawberries
16cm cake → syrup → cream → fruit
18cm cake on top
Chill in the refrigerator for 4 hours.
Remove mold, decorate with whipped cream and strawberries.
