Welcome back to another video. Today is a whopper! Feeding the family for $50!

My goal for this week was to create 5 family dinners from basic ingredients, each meal had to serve a minimum of 4 adult-sized portions AND be quick & easy to whip together... not asking for much! LOL

Here's what I came up with:
Tofu Rice Bowls with roasted carrots, beans & a mint pea pesto sauce
Green pasta (Mint Pea Pesto Pasta with zucchini, peas & baby spinach)
'Japanese Beef Bowl' Inspired rice bowl
Loaded Jacket Potatoes
Cauliflower and Chickpea Curry

Here's the shopping list:
2x 500g blocks of tofu
1x 400g can black beans
1x 400g can chick peas
1x 400g can cannellini beans
1x 400g can coconut cream
1x 400g can diced tomatoes
1x 400g corn
1kg white rice
1x 500g bag penne pasta
1kg bag frozen green beans
1kg bag frozen peas
500g bag frozen cauliflower
1kg carrots
4 large potatoes (approx. 1-1.2kg)
2x small zucchinis
1x medium red capsicum (approx. 250g)
2x medium tomatoes (approx. 250g)
1x avocado
1x 150g bag baby spinach
1x medium onion
1x jar crushed garlic*
1x small bottle lemon juice*
1 litre vegetable stock*
1x sprig of mint*

*Optional. You may have these things on hand already.
