This is one incredible delicious, moist and easy cake to make for Christmas parties or office parties coming your way. My wife brings them to her office once or twice a year and gets raves reviews and requests. It's so easy to put together with one box of yellow cake mix and one box of pistachio pudding mix. With the added sour cream (or Greek yogurt) it's unbelievably tender.
One thing I noted about this doctored cake is that it doesn't smell like a plain old cake mix - that manufactured chemical smell people often complain about. Because of the almond extract and pistachios it's just perfect. And yes, it does feel like it's make from scratch, just a little extra because it's so moist. I'm starting to become a big fan of doctored cake mixes!

Upmix Recipe is as follows
Yellow/White Cake Mix
1.5 Cups of AP Flour (188 grams)
1 cup of white sugar (200 grams)
2 tsp baking powder
1/4 tsp baking soda
Mix together.
For Chocolate cake just take out 6 tablespoons of AP flour and add 6 tablespoons of cocoa powder. In the video I kind of round up to 1.2 cups of flour.
Pistachio Pudding Cake - Perfect for Office parties.
1 box of Yellow Cake Mix
1 package of pistachio pudding (3.4oz)
170g of sour cream or greek yogurt or a mixture of both. (Greek yogurt is a great way to reduce the caloric intake and increase protein.)
160g of melted butter or oil or a combination of both. (Butter is a great flavor, but oil does add to the moistness of the cake.)
120ml of milk or milk alternative
10ml (2 tsp) of almond extract or vanilla extract
green food coloring (This is actually not necessary. I made two cakes for the video and there is a bit of color in the pistachio pudding and you don't really need it. But my wife has used it in the past so I included it.)
5oz of upmix (this depends on which brand of cake box you use)
3 additional tablespoons of liquid because you are adding upmix.
(1–2tablespoons per every 3oz of additional upmix)
85g of pistachios for inside the cake
For the icing
180g of powdered sugar
1 tsp of almond extract
1 tsp of vanilla extract
3–4 tablespoons of milk or liquid depending on how runny you want it.
Additional pistachios to decorate on top.
For really green pistachios: blanch and peel them 1) 30seconds to a minute in hot water, 2) quick ice bath for 10-20 seconds, 3) dry them in towels and rub them in the towels to peel the skin. 4) Put them to the side to dry or in a low over to roast/dry again.
