Let's make some EASY apple puff pastry

2 sheets puff pastry
2 cups apples (sliced or chopped. About 4 med apples)
1/4 teaspoon cinnamon
1/4 tsp apple pie seasoning
¼ tsp vanilla
2 tablespoons butter
2 tablespoons coconut or brown sugar
1 egg (beaten (for egg wash))
Caramel topping for drizzle
For maple frosting drizzle:
4 tbs powdered sugar
1/2 tsp maple syrup
2 tablespoons half/half or cream
To make frosting:
Mix all ingredients. If too thin add small amounts powdered sugar until consistency good for drizzle
1. Preheat the oven to 375F degrees. Defrost the puff pastry according to the package (usually takes about 20 minutes). I defrost and bake on parchment paper. Helps keep the pastry from sticking.
2. Saute the apples, butter, vanilla, cinnamon, other spices, and brown sugar in a skillet until the apples are tender, about 5-10 minutes. Diced pieces/small pieces will cook more quickly and fit better on pastry squares.
3. Cut each puff pastry sheet into 9 equal squares (total of 18 squares). Make fork indents on edges of squares.
4. Place 1-2 tablespoons of the apple mixture on 9 of the puff pastry squares, making sure to leave at least 1/4 to 1/2" around the edges.
5. Drizzle 1 teaspoon of caramel on top of the apple mixture.
6. Place the other 9 puff pastry squares on top and seal the edges securely. If the edges don't stick together, use some water to dampen them and press them together.
7. Brush the tops of the pastry with the egg wash. Can sprinkle coarse cut sugar prior to baking if desired. (I skipped that in this video.)
8. Place in the oven for 15 minutes, or until golden brown on top. Best served warm or room temp. While warm (not hot) can drizzle with caramel sauce, maple frosting, dust with powdered sugar, or leave plain.
I drizzled some with caramel sauce others I used the maple frosting.
