Dizi, A Traditional Persian Dish
Abgoosht or Dizi is one of the most famous & popular dishes in Iran. It's served in stoneware crocks, (Dizi Sangi). It's traditionally cooked in a small Stone Crock Pot, a Pottery Dizi Pot (Traditional Clay Pot) or a Metal Cooking Pot. Persian Pottery Dizi Pot makes this food much tastier.
Ingredients to cook Dizi or Abgoosht
1) 500g of Lamb & Lamb tail fat , cut into medium-size pieces.
2)1/2 cup chickpeas, pre-soaked overnight.
3)1/2 cup beans, pre-soaked overnight.
4) 2 medium onions, cut into pieces.
5) 3 tomatoes, cut into pieces.
6) 2 medium potatoes, cut into pieces.
7) A few peeled garlic cloves
7) 3 dried limes (Peeled Limes)
8) Spices : 1 tsp Salt & turmeric powder, black pepper powder, ground cumin or cumin seeds, cinnamon powder.
9) Brewed Saffron
10) some water
Steps
1) First, put the chickpeas & beans, then the Lamb (mutton), tail fat , tomatoes, onions, garlic cloves in Pottery Dizi Pots.
2) At this stage, add Spices: black pepper, salt, turmeric, cumin seeds & cinnamon powder.Then add some water to the Dizi Pots.
3) Place the Pottery Dizi Pots into a big pot, and fill it half with water.Then, cover the pot & let it simmer over medium heat. Let them cook for 3 to 4 hours.
4) After about 3 to 4 hours when the ingredients have cooked properly, add brewed saffron & potatoes to the Pottery Dizi Pots. Let them cook for 2 to 3 hours.
5) After about 2 to 3 hours, add dried limes (Peeled limes, Tigery Limes😉) to the Dizi pots. They don't make food bitter at all. Now we have to wait for 30 minutes for the Abgoosht or Dizi to be ready. It takes 5 to 6 hours in general to be well-prepared.
6) Finally when all ingredients are cooked well, you should serve the Abgoosht or Dizi with Sangak bread. Serve in Dizi Pots with the mint, basil and radish in a separate bowl on the side & Enjoy! 💕
