Sabudana Strawberry Custard
Servings - 7
INGREDIENTS
Sago - 100 grams
Water - 400 milliliters
Custard powder - 2 tablespoons
Milk - 50 milliliters
Milk - 500 milliliters
Water - 800 milliliters
Strawberries - 200 grams
Condensed milk - 80 grams
Rooh afza - 2 tablespoons
Almonds - 1 tablespoon
Pistachios - 1 tablespoon
Pistachios - for garnishing
PREPARATION
1. In a bowl, add 100 grams sago and 400 milliliters water. Soak for 30 minutes.
2. In another bowl, add 2 tablespoons custard powder and 50 milliliters milk. Mix well and keep aside.
3. Boil 500 milliliters milk in a pan. Add the prepared custard slurry, whisk continuously, and cook for 5–7 minutes until thickened.
4. Remove from heat, let it cool for 10 minutes, then refrigerate for 30 minutes.
5. Boil 800 milliliters water in separate pan. Add the soaked sago and cook for 7–8 minutes until translucent.
6. Remove from heat and strain the sago.
7. In a bowl, add the boiled sago, 200 grams strawberries, 80 grams condensed milk, 2 tablespoons rooh afza, chilled custard milk, 1 tablespoon almond, and 1 tablespoon pistachios. Mix well and refrigerate for 30 minutes.
8. Garnish with pistachios.
9. Serve chilled.
