Ingredients:
4 large green zucchini, shredded
1 white onion, diced
3 - 5 slices of bacon, sliced and cooked
1 1/2 cups of cheddar cheese, shredded
1 cup all-purpose flour
1 tsp baking powder
1 tsp salt
1/2 tsp black pepper
5 eggs, lightly beaten

Directions:
Start off by cooking the bacon as directed on the back of the package. Once it's done, set it off to the side, let it cool then roughly chop up the pieces and add it to a big mixing bowl.

Add the diced onions to the pan with the bacon grease to help scrape up any left on bacon bits. You don't have to do this if you don't want. You can skip this step entirely and just add the diced onions to the mixing bowl with the bacon.

Shred the zucchini then, using a cheesecloth or cheesecloth bag, drain as much liquid from the zucchini as possible. Otherwise your dish will be soggy, even after baking. Add the zucchini to the mixing bowl once drained.

Add the remaining ingredients to the mixing bowl and then mix until fully combined.

To and 8x8 baking dish lined with parchment paper, add in the mixture. Evenly spread out the mixture. Into a preheated oven, uncovered, at 350 degrees for 45 - 50 minutes. Mine was done at 50 minutes. The top should be golden in color and the center should be set. Let cool for 15 minutes before slicing into. Enjoy!
