SEMOLINA BANANA PUDDING / SOOGI PUDDING
A simple dessert dish made with semolina, ghee and sugar. It can be eaten as a sweet at any time during the day or served as a dessert at lunch or dinner.
Ingredients
1 cup semolina or cream of wheat
2 or 3 bananas sliced
2 or 3 teaspoons sugar (add or lessen as required)
2 tablespoons of ghee or butter
10 to 12 cashews - halved or whole
A few raisins or black currants
1 teaspoon Vanilla essence
1 cup milk
2 cups of water
Method
Heat the ghee / butter in a suitable pan and fry the cashew nuts and raisins lightly.
Remove on to a plate
Now add the semolina and stir fry on low heat till the semolina is roasted lightly and gives out a nice aroma. Care should be taken not to burn the semolina.
Keep on roasting and stirring the semolina for 5 to 6 minutes till the grains change their colour to a light golden brown.
Remove on to a plate.
Now add the milk and water to the same pan and start heating.
Mix in the sugar and the Vanilla essence.
Once the milk and water starts boiling, lower the heat.
Add in the roasted semolina, bananas and fried cashew nuts and mix well
Be careful as the mixture has a tendency to splutter.
The semolina will begin to absorb the water and cook.
Keep on stirring till the whole mixture starts thickening and starts to leave the edges of the pan.
Switch off the heat and keep it covered. Allow it to rest for a few minutes then serve warm or when cooled at room temperature.
Leftovers could be stored in the fridge and reheated in a microwave before serving.
