6-inch (15cm) Basque Cheesecake
Ingredients:
350g cream cheese (room temperature)
1/4 cup (60g) sugar
3 eggs (room temperature)
1 tsp (5ml) vanilla extract
150g heavy whipped cream
1 Tbsp (10g) corn starch
(420F/215C) Bake 30-35 minutes

Notes:
After removing the cheesecake from the oven, set it aside to cool. After the cake has cooled, refrigerate for at least 4 hours before serving.
Store leftover cheesecake in the refrigerator for up to a week, or freeze it for a longer period of time.
If you like a "raw" texture (gooey), bake the cheesecake for a few minutes less and then chill overnight before serving.
