Ingredients: -
450 g white beans
onions
oil
bell pepper
carrot
parsnip, celery (root, slicks) - add those veggies if desired
tomato sauce
salt
black pepper
thyme
parsley
Directions:
Soak WHITE beans ( 1 POUND- 450 GRAMS) overnight. THEN Wash THE beans and put them to boil IN COLD WATER
CHOP ONE BIG ONION (OR 2 SMALL ONES)
ADD OLIVE OIL – LIKE 3-4 TBSP
SEASON WITH SALT AND SAUTÉ AT MEDIUM HEAT
ADD ONE BELL PEPPER (CHOPPED), ONE MEDIUM SIZE ONION (CHOPPED), AND ONE MEDIUM SIZE CARROT (CHOPPED)
ADDITIONAL VEGGIES CAN BE ADDED: parsnip, celery rooT, OR CELERY STICKS
WHEN THE WATER IS BOILING, ADD THE CHOPPED VEGETABLES
WHEN THE ONION IS SOFT AND GLOSSY, ADD TOMATO SAUCE – LIKE 100 ML (1/2 CUP)
ADD BAY LEAVES ADD BLACK PEPPER TO TASTE
COVER THE POT AND COOK AT MEDIUM HEAT UNTIL THE BEANS ARE SOFT
AFTER A FEW MINUTES OF COOKING( ONION WITH TOMATO SAUCE), REMOVE THE FRYING PAN FROM THE HEAT, and set mixture aside.
ADD SALT TO TASTE AND LET IT SIMMER OVER MEDIUM HEAT
If it happens for the water to go down during the boiling then add some more hot water
THE WATER SHOULD BE 1-2 FINGERS OVER THE BEANS
WHEN BEANS ARE SOFT (COOKED) – ADD THE SAUTÉED ONIONS (WITH TOMATO SAUCE)
STIR UNTIL WELL COMBINED
ADD DRY THYME TO TASTE
ADD DRY PARSLEY TO TASTE YOU CAN ALWAYS USED FRESH HERBS – THEY ARE BETTER THAN THE DRY ONES
COOK FOR 5 MORE MINUTES, THEN TURN OFF THE HEAT
WHEN SERVING, GARNISH WITH FRESH CHOPPED PARSLEY
THIS BEAN SOUP keeps well in the fridge for 2-3 days and it can easily be reheated
the soup can be eaten with HOT PEPPERS, pickles, and/raw onion sprinkled with salt
