Crispiest Garlic Long Fries
Servings - 3
INGREDIENTS
Potatoes - 700 grams
Water - 800 milliliters
Garlic - 2 tablespoons
Water - 45 milliliters
Corn flour - 50 grams
Salt - 1 teaspoon
Black pepper - 1/4 teaspoon
Oil - for frying
Peri peri seasoning - 1 teaspoon
Tandoori mayonnaise - for garnishing
Green spring onions - for garnishing
PREPARATION
1. Add 700 grams potatoes and 800 milliliters water in skillet. Cover and boil for 8–10 minutes until just cooked.
2. Remove from heat, strain, and allow the potatoes cool for 10 minutes.
3. In a blender, add 2 tablespoons garlic cloves and 45 milliliters water. Blend well.
4. Strain the garlic mixture to extract the garlic water and keep aside.
5. Transfer the cooled potatoes to a bowl and mash well. Add 1 teaspoon salt, 1/4 teaspoon black pepper, and the prepared Galic water. Mix well to combine.
6. Place the dough between butter paper sheets and flatten using a rolling pin. Refrigerate for 30 minutes.
7. After refrigeration, cut the dough into long, thin strips.
8. Heat enough oil in a skillet and deep-fry the strips until golden brown and crispy. Drain on absorbent paper.
9. Sprinkle 1 teaspoon peri peri seasoning evenly over the fries.
10. Garnish with tandoori mayonnaise and green spring onions.
11. Serve hot.
