INGREDIENTS:
1 Small finger of Turmeric (diced)
6-7 Cloves of Garlic (chopped)
2 Small Red Onions (sliced)
1 Shallot (sliced)
4 Roma Tomatoes (sliced or diced)
Cleaned Crab (3-4)
1/2 tsp salt
1tsp Red Chili Flakes
1/2 tsp Ginger Root Juice
1 tbsp Curry Powder
13oz of Coconut Milk
Oil
(GARNISH: Green Onion & Red Chili Flakes)
LET'S COOK:
•Prepare the turmeric, garlic, onions, shallot, and roma tomatoes
•In a skillet set to medium high pour in enough oil to coat the bottom of the pan
•Add in the fresh ingredients, add 1/2 tsp salt and 1 tsp black pepper
•Reduce temperature to medium and let the vegetables simmer for 10 - 15 minutes. Stir occasionally
•After 10 - 15 minutes add in 1/2 tsp cayenne pepper, 1 tsp red chili flakes, 1/2 tsp ginger root juice, 1tbsp curry powder and 13oz of coconut milk
Reduce the temperature down to a slow simmer add the crab put a top on the skillet and let it slow simmer for 10 - 15 minutes
•Garnish with green onion and red chili flakes.
