Biryani is a South Asian one-pot dish in which lamb, mutton, beef, chicken, seafood, or a mixture of vegetables is layered with rice. Biryani can be stuffed with various toppings, including quartered or halved hard boiled eggs, thick quarters of fried potatoes, or fried cashews and fried chicken. Ingredients for marinating lamb:
Lamb with bones 800g
Ginger garlic paste 2 tbsp
Chilli powder 1 tsp
Turmeric powder 1/2 tsp
Shan biriyani masala 5 tbsp
Plain yoghurt/curd 1 cup
Fried onion 1 cup
Chopped coriander leaves 1/2 cup
Chopped mint leaves 1/2 cup
Raisins 1/2 cup
Cashews 1/2 cup
Ghee 2 tbsp
Ingredients for cooking lamb:
Ghee or oil 3 tbsp
Chopped tomatoes 3
Salt to taste (1/2 tsp)
Water 1 cup
Basmati Rice 650g (soaked for 30 minutes)
Water to boil approximately 2L
Oil 2 tbsp
Salt 1 tsp
Cardamom pods 3
Cinnamon sticks 2 pieces
Cloves 4
Fried onions
Chopped coriander and mint leaves
Ghee 2-3 tbsp
Saffron/Orange food colouring
