Ingredients:
• Meat Part:
•3 oz ground pork
•1 tsp minced ginger
•1/2 tbsp oyster sauce
•1/2 tbsp dark soy sauce
•1/2 tbsp cooking wine
•1 tbsp oil
•1 star anise
Sauce:
•dash of salt
•1 tbsp light soy sauce
•1/2 tbsp sesame paste
•1 tsp chinese vinegar
•1/2 tsp sugar
•2 tbsp chili oil (1 tbsp chili crisp+ 1 tbsp chili oil)
•1/2 tsp ground peppercorn powder
•2 spoonfuls of chicken broth
• noodles of your choice (ideally thin, wheat noodles)
•optional: peanut crumbles, vegetables (bok choy, napa cabbage, etc)
Instructions:
MEAT MIXTURE
1. Start by preparing the sauce for the minced meat.
2. Add the dark soy sauce, chinese cooking wine, and oyster sauce together.
3. Next, heat up your wok/pan on medium/medium high heat. Once the wok is hot, pour in 1 tbsp cooking oil of your choice.
4. Once the oil is hot, add in your minced meat and star anise.
5. Stir the mince around and make sure to break it up into tiny bits.
6. Once the mince turns brown, add in your sauce mixture, minced ginger, and chopped up white parts of the green onion.
7. Give everything a good mix and turn the heat down to medium.
8. Let the meat cook for roughly 3-4 minutes, stirring occasionally. We’re drying out the mince and letting all the water evaporate. The final texture should be slightly crispy-adding another layer of texture to the noodles. Once the minced meat is done, set it aside.
9. We’re going to cook our noodles now. II’m going to cook them according to the instructions on the package.
DAN DAN SAUCE
10. Start by heating a pan on medium heat, add in a few handfuls of peppercorn. This will take a few minutes, make sure to stir them around periodically so they don't burn.
11. Once you can the peppercorns become fragrant, turn off the heat.
12. Finely crush the peppercorns into a fine powder, either with a mortar/pestle or rolling pin.
13. In a bowl, add in your sesame paste, light soy sauce, sugar, chinese vinegar, peppercorn powder, chili oil, 1-2 spoonfuls of water or chicken broth and a pinch of salt.
14. Mix together until the sesame paste is completely dissolved.
15. To plate, we’re going to add our noodles directly into the sauce bowl. I also blanched a few pieces of bok choy to top off my noodles. You can substitute this with vegetables of your choice or skip this step completely.
16. To my noodles, i’m adding a couple spoonfuls of the minced meat mixture.
17. Finally, i’m adding some finely chopped green onions, peanut crumbles, and a nice chili oil drizzle.
18.Give the noodles a good mix and they’re ready to eat :)
