Start by collecting malai (cream) from milk daily and store it in the refrigerator for around 10 days. Once enough malai is collected, add some curd to it and mix well. Let it rest for some time so it ferments slightly.
After resting, churn the mixture to separate the butter from the buttermilk.
Collect the fresh butter and transfer it to a pan. Heat it slowly on the stove on low flame.
The butter will melt, foam, and slowly turn into aromatic golden ghee.
Once the milk solids separate and settle, turn off the flame and strain the ghee.
Your homemade, pure, and aromatic desi ghee is ready to use for cooking, sweets, or daily meals.
