The Healthiest Casserole|Healthy Eating Ideas
This casserole is very healthy. Boiled potatoes retain all their vitamins, and spinach is a real superfood!
Ingredients:
500 grams of spinach,
1 onion,
2 cloves of garlic,
5 potatoes,
1 egg,
50 grams of hard cheese (for the potatoes),
50 grams of mozzarella (for the spinach),
salt,
olive oil,
breadcrumbs.
Preparation:
1. Chop the onion and garlic and sauté them in 1 tablespoon of olive oil until they are translucent.
2. Add washed and coarsely chopped spinach. Season with salt and simmer until the volume decreases.
3. Boil the potatoes in their skins, peel them, add 3 tablespoons of milk or potato broth, 1 egg, and grated cheese. Mash everything together until smooth.
4. Place half of the potato filling in a baking dish, followed by the spinach, mozzarella, and the remaining potatoes.
5. Drizzle with 1 tablespoon of olive oil and sprinkle with breadcrumbs.
6. Bake at 200°C (392°F) until browned.
7. Cool, cut into portions. Serve with sour cream.
