In this recipe, Chef Anupa takes the beloved Mumbai-style masala pav and gives it a delicious twist with a generous layer of gooey, melted cheese. The spicy onion-tomato masala is cooked to perfection and stuffed into soft pavs, which are then toasted in butter until golden and crisp. Each bite delivers the perfect mix of spice, creaminess, and crunch. 😍😇
CHEESY MASALA PAV
Ingredients
60 grams processed cheese
4 pavs, slit
2 tbsps butter + for toasting
1 tbsp oil
1 tsp garlic paste
1 large onion, finely chopped + to serve
1 tbsp pav bhaji masala
1 small capsicum, chopped
1 large tomato, chopped
Salt to taste
1 tsp red chilli powder
1 tbsp lemon juice
3 tbsps chopped fresh coriander leaves
Lemon wedges to serve
Method
1. Heat a non-stick tawa.
2. Place the pavs on it and add some butter and toast for a minute, flip and apply butter on the other side and toast for another minute as well. Transfer the pavs on a plate.
3. Heat oil and 1 tbsp butter in the same tawa.
4. Add garlic paste and sauté for a minute.
5. Add ¾ of the onion, mix and cook for 1-2 minutes. Add pav bhaji masala, capsicum, and tomato, and salt and mix well. Cook for 2-3 minutes.
6. Add red chilli powder, remaining butter and mix well. Bring the masala to the centre of the tawa, cover with a lid and cook for 1-2 minutes.
7. Grate processed cheese.
8. Mash the onion-tomato mixture with a masher. Add lemon juice and 2 tbsps coriander leaves and mix well.
9. Bring the mixture to the centre and sprinkle the grated processed cheese and let it melt. Sprinkle the remaining onion and remaining coriander leaves.
10. Switch the heat off and stuff the pavs with the prepared masala and serve with onion and lemon wedges.
