Chicken Crepe Pouch
Ingredients:
For the filling:
500 g chicken breast (diced)
1 onion
2 cloves garlic
1 red bell pepper
1 green pepper
2 tomatoes
1 tbsp pepper paste
1 tsp red pepper powder
1 tsp black pepper
Thyme
Salt
About 1 tea glass (100 ml) hot water
For the crepe batter:
1 cup milk
1 cup water
2 eggs
2–3 tbsp vegetable oil
1½ cups flour
Salt
For the béchamel sauce:
1 tbsp butter
3–4 tbsp vegetable oil
2 tbsp flour
2 cups milk
Salt
Black pepper
For topping:
Grated mozzarella or cheddar cheese
Instructions:
Sauté the diced chicken in a pan. Add the finely chopped onion, garlic, red and green peppers, and cook for a few more minutes. Stir in the tomatoes, pepper paste, spices, and hot water. Cook until the liquid is absorbed, then set aside.
In a bowl, whisk together milk, water, eggs, oil, flour, and salt. Lightly grease a pan and cook thin crepes on both sides.
For the béchamel sauce, heat the butter and oil in a saucepan. Add the flour and stir until lightly golden. Gradually pour in the milk, stirring constantly until thickened. Season with salt and black pepper.
Place a crepe on a flat surface, spoon some béchamel sauce in the center, then add a portion of the chicken filling. Gather the edges to form a pouch and place it in a baking dish. Drizzle with more béchamel sauce and sprinkle grated cheese on top.
Bake in a preheated oven at 180°C (350°F)until the cheese is melted and golden. Serve hot.
