Resep Opor Ayam Putih (untuk 8 porsi)
Bahan:
800 gr ayam kampung, potong 8
5 siung bawang merah
1 batang serai
2 lembar daun salam
5 cm lengkuas
2 lembar daun jeruk
2 sdm minyak
Bahan bumbu halus:
6 siung bawang putih
6 siung bawang merah
3 butir kemiri
¾ sdt jintan, sangrai (opsional)
¼ butir pala
1 sdt ketumbar, sangrai
45 ml minyak
2 sdm air
Bahan lainnya:
150 ml santan
1 liter air
1 sdm garam
1 sdm kaldu ayam bubuk
1 sdt MSG
2 sdm gula pasir
¼ sdt merica
Bahan tambahan:
250 ml air
50 ml santan
Pelengkap:
nasi putih
bawang goreng
emping
cabai rawit hijau (opsional)
Cara membuat:
1. Di dalam blender, masukkan bawang putih, bawang merah, kemiri, pala, ketumbar, jintan dan minyak, haluskan
2. Iris bawang merah, geprek lengkuas dan serai
3. Panaskan sedikit minyak, tumis bawang merah, lengkuas, serai, daun jeruk dan daun salam hingga kecokelatan kemudian masukkan bumbu halus, tumis hingga mengeluarkan minyak
4. Masukkan ayam, masak sesaat kemudian masukkan air, santan, garam, kaldu ayam bubuk, MSG, gula pasir dan merica, masak selama 35-40 menit di api sedang kecil
5. Tambahkan air dan santan, masak sesaat
6. Opor ayam putih siap disajikan

White Opor Ayam Recipe (yield 8 servings)
Ingredients:
800 g free-range chicken, cut into 8 pieces
5 pc shallot
1 stalk lemongrass
2 pc bay leaf
5 cm galangal
2 pc kaffir lime leaf
2 tbsp oil
Spices:
6 clove garlic
6 pc shallot
3 pc candlenut
¾ tsp cumin, toasted (optional)
¼ pc nutmeg
1 tsp coriander, toasted
45 ml oil
2 tbsp water
Other ingredients:
150 ml coconut milk
1 liter water
1 tbsp salt
1 tbsp chicken powder
1 tsp MSG
2 tbsp sugar
¼ tsp pepper
Additional ingredients:
250ml water
50ml coconut milk
Sides:
White rice
Fried shallots
Melinjo crackers
Green Thai chili (optional)
Instructions:
1. In a blender, add garlic, shallots, candlenuts, nutmeg, coriander, cumin, and oil, then blend until smooth.
2. Slice the shallots. Pound the galangal and lemongrass.
3. Heat a little oil. Sauté the shallots, galangal, lemongrass, kaffir lime leaf, and bay leaf until browned. Then, add the blended spices and sauté until oily.
4. Add chicken. Cook briefly, then add water, coconut milk, salt, chicken powder, MSG, sugar, and pepper. Cook for 35-40 minutes over medium-low heat.
5. Add water and coconut milk, cook briefly.
6. White Opor Ayam is ready to serve.
