Below are all the recipe details for meals featured in this video 💛
🥣 Simple Oatmeal Granola
Ingredients:
1½ cups rolled oats
½ cup honey
2 tbsp olive oil
1 tbsp vanilla extract
1 tbsp cinnamon
Instructions:
Preheat oven to 400°F (200°C)
In a bowl, mix oats, cinnamon, olive oil, honey and vanilla
Spread evenly on a baking sheet
Bake for 10 minutes, watching closely so it doesn’t burn
Let cool before serving (it will crisp up as it cools)
🥗 Quinoa Nourish Plate with Roasted Veggies & Mustard Vinaigrette
Ingredients:
1 cup cooked quinoa
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 zucchini, sliced
1 carrot, sliced
1 apple, sliced
1 avocado
For the dressing:
2 tbsp honey
1 tbsp olive oil
1 tbsp mustard
1 tsp apple cider vinegar
Juice from one lemon
Salt + pepper to taste
Instructions:
Preheat oven to 400°F (200°C)
Place bell peppers, zucchini, and carrots on a baking sheet
Drizzle with olive oil, add seasonings of your choice, and roast for 20–25 minutes
In a small bowl, whisk together dressing ingredients
Assemble your bowl:
quinoa as the base
roasted vegetables
sliced avocado + apple
Drizzle with mustard vinaigrette and enjoy ✨
