Flathead fillets are handy to have in the freezer. They defrost quickly, cook super fast and are really popular with kids and adults alike. They're great in these fish burgers which will always make you feel like you’re on summer holidays.
The beer batter, which lightly coats the fish, is incredibly crispy and prefect in soft bread rolls with a crunchy slaw and a tangy yoghurt tartare sauce.
